Dec. 22

• Tipp City Dairy Queen, 513 W Main St. Tipp City: Standard Inspection.

Corrected During Inspection; Critical: Improper storage of poisonous or toxic materials. Observed a sanitizer container stored above clean food containers. After informing the person-in-charge (PIC), the container was moved.

In-use utensils improperly stored. Observed scoops for the various cookies and toppings stored improperly inside of their respective containers. Ensure that the scoop handles are easily reachable and not in contact with food.

Repeat: Non-food contact surfaces of equipment are unclean. Observed the reach-in cooler near the ice-cream machine with food residue build-up.

Comments: At the time of inspection, observed a sanitizer chemical container stored above clean food containers. Ensure proper storage of chemicals.

The facility was well-maintained and the PIC was very knowledgeable about food safety during the inspection.

Discussed also the segregation and proper storage of personal belongings within the Food Service.

• Ruby Tuesday, 1780 W Main St, Troy: Standard/Critical Control Point Inspection.

Corrected During Inspection; Critical: Food equipment surfaces not cleaned at required frequency. Observed bar area pop nozzles to have mold-like buildup on inner parts. Upon informing PIC, the nozzle was taken apart and cleaned.

Corrected During Inspection; Critical: TCS foods not being cold held at the proper temperature. Observed self-serve salad bar to have <50F temperatures on every item left of the center of the area. The right side was observed to have proper temperatures. Upon informing the PIC, items that were out of temperature were pulled and voluntarily discarded. Items discarded included: bleu cheese dressing, honey mustard dressing, italian dressing, ranch dressing, lite ranch dressing, cooked egg, cheeses, edamame (peeled), and pre-made salads (broccoli, cucumber, potato, etc.). Items will be placed on the right side where proper cooling is achieved until the left unit can be fixed. Recommended repair, adjustment, or replacement of left unit.

Corrected During Inspection; Critical: Improper temperature of wash solution in mechanical warewasher. It was observed that the dishwasher was not getting up to proper temperature for sanitizing. Upon informing PIC, they filled a compartment of the 3-bay sink with sanitzer to use after the dishes exit the washer to ensure proper sanitization. Recommend repair or replacement of dishwasher so it functions properly.

Non-food contact surface(s) not cleaned at the required frequency. Hoods above flat-top grill in cooking area observed to have a large amount of grease buildup. Recommend increasing cleaning frequency to maintain equipment clenliness.

Plumbing system not properly maintained or repaired. Handsink between prep sink and gas stove observed to have a severe leak when the water is running causing water to spray. Recommend repair or replacement so the handsink is maintained in good repair and is easily usable.

Plumbing system not properly maintained or repaired. Observed leaking pipes behind cook line prep coolers. Recommend repair or replacement to ensure no leaking occurs.

Waste receptacles for refuse or recyclables stored so they are accessible to insects and/or rodents. Observed a large amount of refuse not in the dumpster. Recommend moving refuse from dumpster enclosure into the dumpster itself to avoid insect and/or rodent access.

Comments: Observed food build-up in the microwaves. Recommend cleaning out microwaves so they are clean to sight and touch. Recommend wiping out microwaves periodically to prevent build-up.

General cleaning needed throughout facility on floors and walls.

Gnats were observed to be present in the bar area. Recommended contacting their pest-control company and hanging fly strips near drains and in compliance with food code.

Recommended addressing as many issues as possible during the closure during the first week of December when the work is being done in the kitchen.

This is a 30-day inspection.

• Troy Elks #833, 17 W Franklin St, Troy: Follow-Up Inspection.

Repeat: Facility does not have an employee with manager certification in food protection. At the time of the inspection, there was not proof on-site of an individual with food safety training.

Repeat: No towels or drying device at the handwashing sink(s).

Repeat: Improper use or placement of insect control devices. Observed glue traps not in an enclosed case.

Repeat: Equipment not approved by a recognized testing agency. Observed a residential microwave being used in the kitchen.

Repeat: Irreversible registering temperature indicator not readily accessible for hot water mechanical warewashing operations.

Repeat: Non-food contact surfaces of equipment are unclean. Observed thick grease build up on the outside of fryer equipment. Observed food debris residue inside reach in units.

Repeat: Facility not maintained clean. Walls and floors throughout the facility observed with food debris and residue.

Repeat: Ventilation system not maintained. Observed air conditioning units and fans with thick grease build up and drips located above the ware washing area.

Repeat: FSO did not have a person in charge per shift with the person in charge certification in food protection.

The following violation(s) have been corrected since the last inspection: Sewage and other liquid waste. Backflow prevention. Direct connection between the sewage system and a drain originating from equipment in which food, portable equipment, or utensils are placed. Observed the soda guns sitting in holders which have drain lines resting inside buckets. Drain lines are not properly plumbed or air gapped. Observed fluid backing up into soda gun holder.

Comments: MCPH received pictures of the corrected plumbing. A consultation will be done in January with MCPH’s Plumbing Department to ensure the plumbing corrections are adequate.
