Jan. 6

• Storypoint of Troy MC North, 1840 Towne Park Dr., Troy: Follow-Up Inspection.

No violations were documented at the time of inspection.

The following violation(s) have been corrected since the last inspection:

Cleanliness of equipment food-contact surfaces and utensils: Equipment food-contact surfaces or utensils are unclean. Observed a mold like build up in ice machine.

Comments: The ice machine has been cleaned and sanitized. Photos have been added as a note-to-file proving correction to this critical violation. Based on this, an on-site re-inspection does not need to occur.

• UTC Aerospace Troy, 101 Waco St., Troy: Standard/Critical Control Point Inspection.

Corrected during inspection; critical: Food package(s) received in poor condition. Observed multiple dented cans within dry storage. After informing the person-in-charge (PIC), the cans were voluntarily pulled and placed with the other damaged out cans.

Corrected during inspection; critical: Quaternary ammonium sanitizing solution at incorrect temperature, concentration, and/or water hardness. Observed sanitizing solution not at correct concentration. After informing the PIC, the sanitizer was replaced with solution at the proper concentration.

Corrected during inspection; critical: TCS foods not being hot held at the proper temperature. Observed tater-tots being held at 110F. After informing the PIC, the tater-tots were pulled and reheated.

Corrected during inspection; critical: Refrigerated, ready-to-eat, TCS foods not properly date marked. Observed pizza sauce held in the walk-in cooler without a date. Upon informing the PIC, the sauce was voluntarily discarded.

Working food containers not properly labeled. Observed a food-bottle containing water which was unlabeled. Ensure proper labeling as to not confuse food items with chemicals or vice versa.

Non-food contact surface(s) not cleaned at the required frequency. Observed the reach in coolers and fridge generally unclean to sight and touch. Ensure proper cleaning frequency to prevent build-ups of food debris and other residues.

Comments: At the time of inspection, it was observed that the tater tots were not holding proper temperature of 135F or above. Please ensure that your facility is keeping a close eye on the proper temperatures required for food safety to prevent potential microbial growth. Also, be sure to attain the proper sanitization concentration (150-400 ppm) before proceeding with regular sanitization protocols per your facility.

The PIC was knowledgeable in food safety and responsive to the violations that were cited.

• Future 4 Families, 840 Arthur Dr., Troy: Standard Inspection.

Non-food contact surfaces of equipment are unclean. Inside reach-in freezer and cooler observed the floors and walls within to be in need of cleaning due to food debris.

Comments: Observed cooking sheets with grease build-up. Owner stated the pans would either be cleaned or discarded and replaced.

Owner stated prep sink is no longer used and that signage will be placed to indicate that the sink is not to be used.

• Pop-Up @ 4 W. Main, 4 W. Main, Troy: Standard Inspection.

No violations were documented at the time of inspection.

Comments: Smokin’ Bee-Bee-Q was the restaurant using the site for Friday 01-07-22.

No violations observed at time of inspection.

• Lincoln Square V, 1320 Archer Dr., Troy: Standard/Critical Control Point Inspection.

Corrected during inspection; critical: PIC unable to demonstrate knowledge by having no critical violations. Critical violations corrected on site.

Corrected during inspection; critical: Handwashing sink is being used for purposes other than handwashing. Observed handwashing sink in back of house with a rag inside. Upon informing PIC, the rag was removed.

Corrected during inspection; critical: Single-use gloves used improperly. Observed food employees touch clothing and personal articles with gloves on then proceeding to work with food. Upon informing PIC, employees washed hands and donned new gloves.

Corrected during inspection; critical; repeat: Food not properly protected from contamination by separation, packaging, and segregation. Observed raw chicken stored over raw beef in walk-in cooler. Upon informing the PIC the chicken was moved.

Corrected during inspection; critical; repeat: Refrigerated, ready-to-eat, TCS foods not properly date marked. The following items were observed without a date mark: 1. cooked rice 2. cooked chicken 3. guacamole 4. housemade salsa 5. Prime rib.

Repeat: Improper storage of food items. Observed food stored in bins directly on the floor of the walk-in cooler and freezer.

Food employees outer clothing is dirty. Observed food employees wearing soiled aprons.

Repeat: Wiping cloths air-dried improperly. Observed sanitizing rags stored out of solution.

Equipment and utensils are not being air dried. Observed dishes stacked on the clean rack wet nesting.

Repeat: Cutting blocks or boards cannot be effectively cleaned and sanitized. Observed cutting board on the prep cooler across from the grill deeply scratched, scored, and discolored. Cutting board is no longer smooth and easily cleanable.

Facility not maintained clean. Floors throughout the facility were observed unclean behind and under equipment, especially on the grill line.

• Pearson House Restaurant, 28 N. Miami St., West Milton: Standard/Critical Control Point Inspection.

Corrected during inspection; critical: PIC unable to demonstrate knowledge by having no critical violations. Critical violations were corrected at the time of inspection.

Corrected during inspection; critical; repeat: PIC unable to demonstrate knowledge cooling foods to be reheated at another time. Discussed cooling with PIC.

Corrected during inspection; critical; repeat: Food employee(s) did not wash hands when required. Observed an employee pick an item up off the floor and then donned new gloves. Upon informing the employee of proper hand washing, their hands were washed before donning new gloves.

Corrected during inspection; critical; repeat: TCS foods not being cold held at the proper temperature. Observed several open items that were labeled to be refrigerated after opening. Upon informing PIC, items were discarded. The items were the following: 1. four jars of yellow mustard 2. one bottle of spicy mustard 3. one bulk jar of yellow mustard 4. one bottle of chocolate syrup.

Corrected during inspection; critical; repeat: Refrigerated, ready-to-eat, TCS foods not properly date marked. Observed several items not date marked throughout the facility. Upon informing the PIC the following items were marked with the correct date that they were prepped: 1. Salmon 2. French dressing 3. Thousand island dressing 4. Ranch dressing 5. Lettuce 6. Ham 7. Tomatoes.

Corrected during inspection; critical; repeat: Ready-to-eat, TCS food not properly discarded when required. Observed several items throughout the facility that were not properly discarded. Upon informing the PIC, all items were discarded. The following items were past disposition date: 1. lemon filling (1/5) 2. BSC filling (1/6) 3. Buttermilk (1/6) 4. Coleslaw (1/4).

Equipment and utensils are not being air dried. Observed several stacks of cups wet nesting in the server drink station. Upon informing the PIC the cups were moved to a location were they could air dry.

Repeat: Re-use of single-service or single-use articles. Observed single use containers being re-used for tea storage.

Repeat: Equipment not approved by a recognized testing agency. Observed the following items that are not for commercial use: 1. Waffle iron 2. Kitchen aid mixer 3. Two freezers.

Corrected during inspection; repeat: Accumulation of refuse, recyclables, or returnables. Observed accumulation of cardboard refuse outside of the facility. Upon informing PIC, the cardboard boxes were discarded.

• McDonalds Troy, 1560 W. Main St., Troy: Follow-Up Inspection.

Repeat: Equipment components are not intact, tight or properly adjusted. Observed the walk-in freezer condensing unit and drain lines with ice build-up.

Repeat: No sanitizer test kit available. Observed no bleach test strips available for the sanitizing buckets and the dish machine.

Repeat: Non-food contact surfaces of equipment are unclean. Observed the following surfaces unclean: 1. Hot holding areas 2. Inside and outside of microwaves 3. Food grade paper drawers.

Repeat: Facility not maintained clean. Observed the following areas with food debris and build-up 1. Under the fryers 2. Floors underneath the 3-bay compartment sink 3. Flooring in the walk-in freezer.

Repeat: Ventilation system not maintained. Observed fryer hood vents with a thick grease build-up.

The following violation(s) have been corrected since the last inspection:

Equipment food-contact surfaces and utensils – cleaning frequency: Food equipment surfaces not cleaned at required frequency. Observed the following items unclean: 1. Ice machine front plate was observed to have yeast-like build-up. 2. Frappe machine was observed severely unclean.
