Nov. 10

• Speedway #5237, 1000 W. Main St., Tipp City: Standard Inspection.

Presence of dead pests or insects. Observed a large amount of dead gnats in the cabinets under the fountain machine.

Repeat: Facility not maintained clean. Floors and walls throughout the facility in need of deep cleaning.

Repeat: Physical facilities not maintained in good repair.MIssing cove base observed going from the prep area to the storage area.

Comments: PIC knowledgeable. Cold holding below 41F. Hot holding above 135F.

• Winans Chocolates & Coffees, 3130 N. Co. Rd. 25A, Troy: Standard Inspection.

Repeat; Facility does not have an employee with manager certification in food protection. At time of inspection, facility does not have an employee with manager certification in food protection.

Comments: At time of inspection, no Manager’s Certified Individual on staff. PIC stated that conversations were happening with corporate to get the required training. Obtain the necessary training to come in compliance with the Ohio Uniform Food Safety Code.

• The Trojan Horse, 1469 S. Co. Rd. 25A, Troy: Standard Inspection.

Corrected During Inspection; Critical: PIC did not ensure employees are properly maintaining temperatures of TCS foods during hot and cold storage.

Corrected During Inspection; Critical: PIC unable to demonstrate knowledge of cleaning and sanitizing. Upon questioning, it was determined that food contact surfaces are only being cleaned “daily.” Food contact surfaces are required at minimum to be cleaned and sanitized at a frequency of every four hours. After discussion with the PIC, food surfaces will now be cleaned and sanitized every two hours, or as needed.

Repeat: Facility does not have an employee with manager certification in food protection.

Corrected During Inspection; Repeat: Employee eating, drinking, or using tobacco in non-designated area. Employee beverage observed on racking directly above pizza/sandwich prep station. Upon informing the PIC, the beverage was moved to the designated employee area.

Corrected During Inspection; Critical: Food not properly protected from contamination by separation, packaging, and segregation. In the walk-in cooler, observed raw shell eggs stored above ready-to-eat (RTE) food items. Upon informing the PIC, the raw shell eggs were moved below RTE foods and placed on the bottom shelf.

Corrected During Inspection; Critical; Repeat: TCS foods not being cold held at the proper temperature. In the flip top prep cooler unit, observed cut tomatoes and lettuce tempting out at 47-48F. Upon informing the PIC, the items were placed in the walk-in cooler. After a while, the items were re-tempted and still holding in the temperature danger zone (>41F). At this point, the PIC decided to voluntarily discard the TCS food items.

Corrected During Inspection; Critical: Refrigerated, ready-to-eat, TCS foods not properly date marked. In the walk-in cooler, a container of pizza sauce was observed without a date mark. Upon informing the PIC, the prep or open date of the pizza sauce was unknown, thus voluntarily pulled and discarded.

Corrected During Inspection; Critical: Working containers of poisonous or toxic materials not properly labeled. Observed spray bottles with disinfectant spray without labels with their common name. To prevent misidentification of chemicals, ensure they are labeled to indicate their contents. Upon informing the PIC, the unlabeled spray bottles were prominently labeled.

Food thermometer not readily accessible. PIC unsure of where thermometers were to monitor temperatures of both hot and cold holding and cooking temps of TCS foods. Obtain thermometers to monitor safe for service temperatures of TCS food items.

Corrected During Inspection: Improper use and/or maintenance of wiping cloths. Observed wet sanitation rag sitting on on prep table. Upon informing the PIC, it was placed in the dirty linen basket. Ensure wet rags are kept in solution to prevent bacterial growth.

Water treatment device or backflow preventer not inspected/serviced with documentation as required. The backflow prevention device was last certified in May 2020. Contact the State licensed plumbing company registered in the County to have the backflow preventer certified (annually).

Repeat: Facility not maintained clean. The floors throughout the facility are in need of a thorough cleaning, especially under and behind equipment. Enhance the frequency of cleaning throughout to prevent the sort of observed build-ups of food debris, dirt and other residues.

Comments: At the time of inspection, food safety knowledge was lacking. Discussed with PIC that a consult could be scheduled to go over food safety with staff to improve training of both Management and food employees.

All critical food safety items were able to be corrected while on-site.

Enhance the frequency of cleaning throughout and use the inspection report to improve upon areas of concern noted at the time of inspection.

• Hook Elementary School, 729 W Trade Square, Troy: Standard Inspection:

Non-food contact surface(s) not cleaned at the required frequency. Observed hood filters above oven/warmer very dusty. Recommended cleaning or replacement to prevent potential dust contamination of non-food contact surfaces, food contact surfaces, and/or food.

Non-food contact surface(s) not cleaned at the required frequency. Observed box fan in warewashing area to be dusty. Recommended cleaning to prevent contamination of food, food contact surfaces, and/or other non-food contact surfaces.

FSO did not have a person in charge per shift with the person in charge certification in food protection. At time of inspection, PIC did not have food safety certification. Recommended getting PIC food safety certification.

Comments: The Manager’s Certified individual was not on-site and no certified PIC food handler was present. Recommended at least one employee per shift doing food work in the kitchen get at least level 1 food safety certification when the Manager is absent.

Recommend cleaning ceiling tiles in the dry stock room as there is some minor build-up on them.
