• Grandpa Joe’s Candy Shop, 1 E. Main St., Suite 101, Troy: Standard Inspection.

Corrected During Inspection: Improper use and/or maintenance of wiping cloths. Observed wiping cloths on floor behind the ice cream counter. Upon informing PIC, they were removed and put with other dirty cloths for cleaning.

Repeat: Physical facilities not maintained in good repair. Observed cracked floor tiles throughout the facility which may be because of foundation settling. Recommended repair or replacement so the floor is smooth and easily cleanable.

RFE does not comply with Level One Certification requirements. PIC did not have level 1 food safety certification. PIC stated they will be getting level 1 certification, but their manager has not yet gotten them scheduled for training.

Comments: Facility maintained clean throughout.

Facility does not have an employee with manager certification in food protection. Could not located level 2 food safety certification on-site. Ensure this certificate is posted on-site to prove that the facility has a level 2 food safety certified individual.

Corrected During Inspection: Improper use and/or maintenance of wiping cloths. Observed wiping cloth/towel in walk-in cooler on the ground near a rack of thawing product. PIC was informed and the cloth/towel was removed.

Non-food contact surface(s) not cleaned at the required frequency. Observed utensil bins with debris in them. Recommended cleaning them out as the utensils get used to avoid buildup of debris in the future.

Corrected During Inspection: Non-food contact surface(s) not cleaned at the required frequency. Observed pans being used to catch drippings from thawing product in the walk-in cooler. Recommended cleaning these daily to avoid potential pest attractants. Upon informing PIC these pans were pulled for cleaning.

Improperly cleaned storage area for refuse, recyclables, or returnables. Observed a large buildup of trash behind the dumpster. Recommend cleaning up trash to avoid potential pest attractants.

Repeat: RFE does not comply with Level One Certification requirements. No employee on-site with level 1 food protection certification. Recommended that everyone get certified. When the manager’s certified individual is absent, at least one person per shift shall comply with the level 1 PIC food handler requirement.

Comments: No level 1 food safety certified individuals on site. Recommended all personnel to get level 1 food safety certification to ensure there is at least one individual per shift who has level 1.

Observed dumpster area with trash littered behind the dumpster. Recommend moving refuse into dumpster to maintain area clean.

Utensils and equipment contacting non-TCS foods not cleaned at required frequency. Observed buildup inside cappuccino machine. Recommended cleaning at next opportunity.

Corrected During Inspection; Critical; Repeat: Equipment food-contact surfaces or utensils are unclean. Observed residue inside ice chute. PIC stated ice machine is serviced every quarter or so. Recommended pointing this out to their vendor at the next cleaning.

Corrected During Inspection; Critical; Repeat: Equipment food-contact surfaces or utensils are unclean. Observed pop nozzles with mold-like buildup inside the coke nozzle. Upon informing PIC, it was pulled and they started cleaning it.

Corrected During Inspection; Critical: Refrigerated, ready-to-eat, TCS foods not properly date marked. Observed cheddar brats in walk-in cooler not properly date marked. Upon informing PIC they were properly date marked.

Corrected During Inspection; Critical: Ready-to-eat, TCS food not properly discarded when required. Observed items in walk-in cooler not discarded according to date marks: Tornadoes and hot dogs. Upon informing PIC they were voluntarily pulled and discarded.

Facility not maintained clean. Observed soda syrup on wall behind the soda syrup boxes. Recommended cleaning. PIC was aware and had not yet gotten to cleaning it yet. Will be cleaning at next opportunity.

Comments: Buildup/residue noted in cappuccino machine. Recommended cleaning at next opportunity.

Residue in ice chute. Recommended informing vendor that the next time it is cleaned, to focus on the ice chutes.

Be diligent with date-marking and discarding foods that are past their date marking.
